Plus, matcha drinks—while steadily growing in popularity—weren’t necessarily the main focus of a Dominican coffee shop like ours. Or so we thought.

A lot of coffee shops treat matcha as an afterthought—just another menu item for those who don’t want coffee. But we didn’t want to do matcha halfway. If we were going to serve it, we were going to do it right.

That’s why we made it a point to source high-quality ceremonial-grade matcha—the kind that’s smooth, vibrant, and packed with flavor. We love experimenting with coffee drinks and testing what flavor pairings go well with our espresso, so we took the same approach with matcha.
